Asafoetida 100g noemt men ook wel duivelsdrek (Ferula Asafoetida) of Hing poeder. Het is gele gedroogde hars afkomstig van de sappige wortels en stelen van een plant uit de Schermbloemenfamilie. Deze plant groeit graag in Iran, Afghanistan en India.
Het is te gebruiken als smaakversterker in curry en stoofgerechten en is zeer geschikt voor peulvruchten. Geur en smaak hebben iets weg van prei, ui en knoflook en het wordt daarom ook weleens als vervanger hiervan gebruikt. Een theelepel van deze ‘yellow powder’ komt overeen met een eetlepel uienpoeder plus een teentje knoflook. Altijd eerst even meebakken om de sterk doordringende zwavelachtige geur uit te schakelen…
Ingrediënten: rijstmeel, arabische gom, asafoetida, turmeric en tarwebloem.
